  an exquisite probe to correlated dynamics\nwithin a material system. In m
 y talk I shall discuss some recent\nexperiments and our theoretical invest
 igations into developing an\ninput/output scattering theory approach that 
 connects an incoming\nphoton Fock state to an outgoing Fock state\, treati
 ng both the\ninternal (material) and photon dynamics on a consistent footi
 ng. As\nproof of concept\, we show how entangled photons can probe the inn
 er\nworkings of a model system undergoing spontaneous symmetry breaking.
