Ming Rong (Simon) Liu

PhD Student

Simon first joined the lab as a volunteer during his undergraduate studies in 2022, where he discovered his interest in nutritional lipid analysis. This early experience led him to complete his MSc in 2025 and continue his work with Professor Ken Stark by beginning a PhD in 2026. His current research focuses on validating a Canadian screener for EPA and DHA, which he developed during his MSc.

Over his time in the lab, Simon has developed a strong portfolio in gas‑chromatography based lipid analysis, working with both food and blood samples. His expertise has supported several major collaborations, including analysis of Arctic salmon muscle‑tissue, mouse brain and heart tissues, and omega‑3 oxylipin work with BioBPG and partners in Denmark. These projects have led to multiple publications and have played a key role in advancing the lab’s analytical capabilities.

Looking ahead, Simon aims to extend his strong foundation in GC lipid analysis into the field of lipidomics, applying tandem mass spectrometry approaches to deepen his understanding of lipid pathways. He is particularly interested in Omega‑3 biomarkers and the role of oxylipins in regulating lipid metabolism across different biological systems.

Outside the lab, Simon’s passion for health and community involvement has made him a familiar face across campus. He serves as a president for UWaterloo Muay Thai Club, and regularly organizes student events. He is also the most senior member of the part‑time staff at the UWaterloo Athletic Department, where he supports recreational programming and student engagement.
