Nutrition in Disguise is a volunteer-run project at the research kitchen located at the Schlegel-UW Research Institute for Aging, where the research team is using innovative strategies to increase the nutrient content of everyday popular recipes such as muffins, ice cream, pancakes, or pudding. Nutrient dense ingredients such as squash, beans, or lentils are added to the recipes without trying to alter the taste and texture considerably while maximizing the nutrient content.
In the next few months Nutrition in Disguise is moving towards taste testing products with individuals in the community. Several of the recipes to be trialed include: banana ice cream, black bean pudding, coconut cake, and chocolate beet muffins. Nutrition in Disguise in the long term plans to test food products with residents living in long-term care and explore methods of large scale production for these recipes.
