The new research kitchen as part of the Schlegel-University of Waterloo Research Institute for Aging (RAI) creates an innovative learning environment. Researchers and students will work alongside cooks, chefs and dietitians to find food based solutions that promote health and quality of life for long term care residents.
A key area of interest for the Agri-food for Healthy Aging researchers is on improving the sensory and nutritional content of pureed foods. Many older adults require food texture modification, but the results can be less than appealing. The co-location of the RAI research kitchen with University Gates Schlegel Village provides a unique opportunity to prepare, taste test and study new products.
