Few things say summer in southern Ontario like fresh peaches! Peaches are beloved for their juicy sweetness, velvety skin and fragrant aroma. Native to China, where they have been cultivated for thousands of years, peaches symbolize longevity and immortality.
Today, they are grown in many parts of the world, especially in Niagara-on-the Lake which has an annual peach festival and pick-your-own-peaches opportunities. Peaches are celebrated in everything from desserts and jams to salads and savoury dishes. Their soft, golden flesh and blushing skin make them not only delicious but also visually appealing.
Nutritionally, peaches are a powerhouse of vitamins and antioxidants. They are rich in vitamin C, which supports the immune system, and contain fiber that aids digestion. Low in calories and high in water content, peaches are a hydrating and satisfying snack. Their natural sweetness makes them a healthier alternative to processed treats, and they can be enjoyed fresh, grilled, baked, or blended into smoothies. The pit, or stone, at the center is inedible, but it adds to the fruit’s classification as a drupe, like cherries and plums.
Food Basics sells peaches for approximately 60 cents each. However, this time of year peaches can be found in roadside stalls and farmer’s markets at incredible prices!
Ingredients:
For the filling:
- 5–6 ripe peaches, peeled and sliced (or use 5 cups frozen/thawed peaches)
- 1/4 cup maple syrup, coconut sugar, or granulated sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tbsp cornstarch or arrowroot powder
- 1/2 tsp cinnamon (optional)
For the topping:
- 1 cup all-purpose flour (or use a 1:1 gluten-free blend)
- 2 tbsp coconut sugar or brown sugar (can also use granulated sugar)
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk of choice (dairy or plant-based)
- 1/4 cup butter, coconut oil or vegan butter, melted
- 1/2 tsp vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a 9-inch baking dish.
- Prepare the filling: In a large bowl, mix sliced peaches with maple syrup/sugar, lemon juice, vanilla, cornstarch, and cinnamon. Pour into the baking dish.
- Make the topping: In another bowl, whisk together flour, sugar, baking powder, and salt. Add milk, melted coconut oil/butter, and vanilla. Stir until just combined.
- Assemble: Spoon the batter over the peaches. It doesn’t need to cover them completely—some gaps are fine.
- Bake for 35–40 minutes, or until the topping is golden and the filling is bubbling.
- Cool slightly before serving. Enjoy warm, optionally with (vegan or dairy) ice cream or whipped cream.
