Recipe of the month: Sensational Snow Peas

Snow peas, known for their tender, edible pods, have a long and storied history that traces back thousands of years. Believed to have originated in the Mediterranean region, snow peas were cultivated as early as 2,000 BCE. Ancient civilizations, including the Egyptians and Greeks, valued peas for their nutritional benefits, though these early varieties were likely tougher and less sweet than modern snow peas.

The snow pea as we know it today — flat-podded and eaten whole — was likely refined in Asia, particularly in China, where it became a staple in traditional cuisine. By the 19th century, snow peas had spread to Europe and North America, where they were embraced for their versatility and quick cooking time.

Snow peas are part of the legume family and are closely related to sugar snap peas and garden peas. Today, they are a popular ingredient in stir-fries, salads and healthy snacks, appreciated for their crisp texture and mild flavour. 200g of snow peas cost $3 to $4. You might be able to find them for less at a local farmers’ market.

Ingredients:

  • 2 cups fresh snow peas, trimmed
  • 1 tablespoon sesame oil (or vegetable oil)
  • 2 cloves garlic, minced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame seeds (optional)
  • Salt and pepper to taste
  • Optional (1 cup diced chicken breast or 1 cup diced firm tofu)
  • Optional: serve with rice, potatoes, or other grain of choice

  • Optional: Put rice (or grain/potatoes of choice) on to cook
  • While rice is cooking, make the snow pea stir-fry.
  1. Prep the Snow Peas: Rinse the snow peas and trim the ends. Pat them dry.
  2. Heat the Oil: In a large skillet or wok, heat the sesame oil over medium-high heat.
  3. Sauté Garlic: Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  4. (Optional) Add Protein: Add protein of choice to skillet. Stir fry tofu for 5-6 mins until golden brown; Stir fry chicken 5-7 mins until fully cooked and no longer pink.
  5. Add Snow Peas: Toss in the snow peas and stir-fry for 2–3 minutes, or until they are bright green and just tender-crisp.
  6. Season: Add soy sauce, salt, and pepper. Stir well to coat evenly.
  7. Serve: Sprinkle with sesame seeds if desired. Serve hot as a side dish or over rice for a light meal.
