Chef Roland pursued Culinary Management at George Brown College. Growing up with his parents’ restaurant in Kitchener Ontario, he experienced the aromas of exotic spices as well as traditional local cuisine being prepared. He has worked in many restaurants including Chateau Laurier in Ottawa, Movenpick Toronto, as well as Café Mozart pastry and the Holiday Inn in Kitchener.
He has always enjoyed fragrant and colourful foods. Cantonese Cuisine has been a comfort food for him, but occasionally he still loves to eat a good burger. Though Chef Roland has never formally travelled outside of Canada for work, he has many experiences with great chefs from all over the world. He was fortunate enough to experience great traditional foods and listen to the amazing stories of the food they prepared which enhanced the experience and felt like you were with them in their homeland.
Chef Roland chose to work with the University because of the great community and being able to meet many great students, staff, and faculty. He was encouraged by the ability to create dishes allowing students to experience new foods. He has accomplished quite a bit throughout his career such as leading his team to win first place both for the overall CCUFSA Chef Dining Award as well as the People’s Choice Award. With his team he also won first place in the ACF Sanctioned Chef Culinary Conference and second place for the NACUFS Retail Sales (Multiple Concepts) Loyal E. Horton Dining Award (Brubakers). Chef Roland also achieved third place in the Bakery Showcase of Canada Plated Desserts and is a member of the Waterloo Ringette Association board of directors.
