CHEF BLOG: Chef Djura's New York Steak with Sauteed Vegetables

Introduction

This is the way that I prepare steak for myself and my wife at home. It is not the traditional way of cooking a steak, but the results are great. Any kind of steak can be cooked this way. If you decide to use a larger cut of meat (10 oz or more, or Tomahawk steak) you should consider using an oven in combination with a stove for cooking. Chef Djura Novta

INGREDIENTS:

Ingredients

  • 2 steaks, 6 oz each recommended  

  • Montreal Steak Spice (to taste) 

  • 1 Leek 

  • 1 Red Pepper 

  • A bit of Garlic 

  • Salt and Pepper (to taste)  

  • 2 tbsp Canola Oil 

  • 4 tbsp Olive Oil 

  • 2 cups of Cabbage 

  • 1 Carrot 

DIRECTIONS:

  1. Step 1 Take steaks out of the fridge and keep them on counter for at least 15min (bring them to room temperature). 
  2. Step 2Meanwhile prepare vegetables: wash, peel, and slice. Hard vegetables like carrots should be cut thinner, while more soft vegetables like pepper and cabbage can be cut larger. 
  3. Step 4Step 3Preheat you frying pan to high heat, add a few drops of canola oil and place steaks into the pan. Cook for 2 min on each side for medium rare (add 1 min to each side for medium). 
  4. Syep 5 Season it during cooking process on both sides with Montreal steak spice, salt, and pepper. 
  5. Take steaks out of the frying pan and let them rest while you sauté the vegetables in same frying pan. 
  6. Step 6Reduce heat to medium, add olive oil, add carrot. Cook 1-2 minutes then add the cabbage and leek. Cook another 5-6 min and finally add pepper and chopped garlic. Sauté an additional 3-4 minutes.  
  7. Step 7 final resultsSeason vegetables with salt and pepper during the cooking, and make sure to taste it at the end. Add more seasoning if needed.  

TIPS:

Your kitchen should be your playground! 

  • Steak size can vary, if you are using 8oz Steak add 2-3min cooking time (1-1.5min each side). But I would recommend a smaller portion size, for both sustainability and Health Canada recommendations.  
  • Purchase steak when is on sale. When steak sits a couple of days in store and slightly changes color that is a good thing! First you know that there is not any sodium or preservatives added, and second that steak was aging for at least a week. So, because it is not appearing as supermarkets expect meat to appear, they will put in on sale, while in fact, you are getting much better product for a good price! 
  • Use any combination of vegetables, herbs and seasonings you like. Go big on vegetables. Try to have reusable bag when you are shopping, and pick vegetables that are in season and not pre-packaged in plastic bags or containers when possible.
